why is the cake mix not baking completely?

My wife has been baking cakes for several years, using Duncan Hines cake mixes. During the last 12-14 months, the cakes are coming out not completely baked. Nothing has changed in terms of her method. The oven has been tested and is fine. Same pans, same brand of mixes.

Did she change mixing cups? They are not always exactly the same so maybe she is inadvertently adding more liquid. She just needs to increase the baking time a little bit.

same brand isn’t always the same unfortunately allot of co. think they can “improve” a product (or try to cut costs) by using different materials try a diff brand until you find one that works

Some times the mixes are not as well put together as they should be and they take longer to bake. I had that problem and I found that if I left them in for a little longer, they baked all the way.
In one mix it took another 10 minutes to bake.

I have done cakes for many years. If you have tested the oven and the pans are not worn out then it could be a case of over mixing the batter. Muffins are like that too. The less mixing you have to do to blend the items the better :)

It sounds like the manufacturer of the mix may have changed the formula of the mix. Try a different mix or even from scratch and see if they come out baked properly. I’ve found a few products that I’ve used regularly seem to have changed. The most noticeable was the block margarine I use for baking. It used to come in 1/2 cup squares, but now the squares are just under a 1/2 cup.
